Burger with Wasabi Slaw and Quick Pickles
Ingredients
2 bean burgers
2 burger buns of your choice
¼ white cabbage
1 carrot
1 lime
1tbsp wasabi mayo
½ red onion, finely sliced
½ cucumber, sliced
125ml white wine vinegar
1tsp caster sugar
1tsp sea salt
2 large handfuls watercress
Method
- Preheat the oven to 200ºC/Fan 180ºC/Gas Mark 6, then cook the burgers according to the packet instructions.
- Place the vinegar, sugar and salt into a small bowl. Add the prepared onion and cucumber to the bowl and coat. Leave to pickle.
- Finely slice the cabbage and julienne the carrot. Use a mandolin or food processor for really fine slices.
- Next, place in a medium bowl with the juice of ½ the lime and the wasabi mayonnaise. Season with salt and pepper and mix well. Set aside.
- Once the burgers are cooked, half the burger buns and layer with wasabi slaw, the burger, pickles and top with a handful of watercress.
